Chicken Parmesan Alfredo Bake

Chicken Parmesan Alfredo Bake
 


This is not a meal for those of you that are dieting or watching your calories.  This is something that I make maybe twice a year.  But it is oh so yummy!!  Thought I would share the recipe with ya'll.
 
 
Recipe:
3 boneless skinless chicken breasts (about 1.5-2 lbs)
bread crumbs (I use planko)
3-4 eggs for batter
Oil for frying
Big jar of Prego Spaghetti Sauce
1 bag of shredded parmesan cheese (usually has 1.5 cups in it)
1 bag of shredded mozzarella cheese (2 cups)
8 eggs for alfredo sauce
1 pint of heavy whipping cream
 
 
You will need to start off by cutting up the chicken in 3 pieces per chicken, then mix it with egg batter and then planko bread crumbs, I always double batter it.  Put it in a hot pan with oil and cook till it is cooked through, no longer pink.  Once it is done, put in a 9x12 baking dish.  
Once your chicken is all fried up, then pour a jar of spaghetti sauce over it and put it in an 350 degree oven uncovered for 30 minutes. 
 
While the chicken is frying, you can prepare the alfredo sauce.
In a medium sauce pan, break the eggs and get just the egg yolk into the pan.  There won't be any need for the egg whites.  Once you have all 8 in the pan, stir it up and pour in the heavy whipping cream.  Then put in a cup of parmesan cheese.
Once you put the chicken in the oven, you will need to start cooking the sauce and get the water boiling for the noodles. 
 
 
The sauce will be cooked on low medium heat.  You will need to stir this constantly.  You do not want this to cook fast otherwise it will start clumping up.  It takes about 20-30 minutes for it to cook depending on your stove.  Once the cheese is starting to melt and the sauce is thickening up some, it is when you will need to put it over the hot cooked noodles. 
 
 
If the sauce is too thin, you can just stir it up with the noodles and the heat from the noodles will thicken it up, if its still thin to your tastes, you can just turn the burner on low heat and stir it till it is thicken.  You do not want to overcook the sauce because it will get clumpy.
 
Once the chicken has been cooking for 30 minutes, take it out and put the rest of the parmesan cheese over it, along with the 2 cups of mozzarella cheese and put it back in the oven for another 5 minutes or until cheese is melted.
 
 
 
 There you go! It is time consuming and takes about an hour to make.  This will make 2 meals for my family of 5.  It is great for a big family gathering or 2 meals.  Its my recipe for chicken parmesan alfredo bake!
